Transport to sunny Spain from the comfort of your own home with this delicious recipe for Pintxos Gilda from Blue Bay Gourmet. This authentic Basque appetiser is packed with flavour, simple to prepare and is best enjoyed with some good quality bread and a Spanish wine or cocktail. Recipe to make 6 pintxos.

· 12 green pitted olives – 
our favourites are Spanish Queen Green from Losada and Segreti and we also love Mount Zero Olive’s Gordals, grown here in Australia.
· 6 anchovies – 
we use Conservas Ortiz anchovies (nothing compares!)
· 12 pickled guindilla peppers – 
we use La Boqueria native Basque long green pickled peppers
· Good quality olive oil – 
we use Pendleton Olive Estate EVOO
· 6 cocktail sticks

Skewer one olive, one end of the anchovy fillet, one guindilla pepper, followed by a second olive, the second end of the anchovy fillet and finish off with another guindilla pepper. Marinade in the olive oil and enjoy!
