As the chef behind the ‘food as medicine’ movement, the creator of delicious umami-rich plant based paste @blackbettybamaustralia, through her wellness business Gowings Food Health Wealth and work with Le Cordon Bleu, Samantha Gowing has been spreading the word on healthy cuisine long before kale became the superfood superstar and green juice starting trending on instagram. As well as guiding us through an exciting day of live demonstrations on the Sample Food Festival cooking stage as our MC, Sam will be running a workshop on waste hacks.

With the current challenges we face rising food costs and food security, the war on waste has never been more urgent. Times have changed from the days when feasting and the quest for exotic ingredients where highly sought after. These days people are becoming increasingly concerned with how our food is grown, where it comes from and what they can to do contribute to the local economy, ecology and the environment.

Sam’s workshop looks at sustainability through the lens of food waste. She will discuss experiences with changing habits around wastage and will demonstrate some thrifty, doable tips and tricks of the trade.

Best-selling cook-book author Julia Busuttil Nishimura will be demonstrating two recipes from her new book AROUND THE TABLE live at Sample Food Festival.

See how Julia makes her cavolo nero and ricotta pasta and an apple and ricotta frittelle. The frittelle will feature local distillery Winding Road Distilling Co’s premium craft rum.

Award-winning journalist, meteorologist, food writer, cook book author and co-creator of cult “chefs” spread “Oomite” Magdalena Roze will be bringing her Spring Sweets to the Sample Food Festival cooking stage this year.

Watch Magdalena prepare warm kudzu pudding and a no bake cheesecake.

Nick Pearce, recipe creator for the popular Instagram @recipearce, will be teaming up with Fair Game Wild Venison where they will talk about this growing sustainable meat movement, show you how to break down a wild deer whilst Nick demonstrates some easy ways to cook with the wild game meat.

Shuck Oysters Menu Reveal!

Based in Bangalow, Shuck is a local wholesaler of premium Australian oysters to fine dining restaurants in the Northern Rivers and Gold Coast. At this year’s Sample Food Festival, Shuck will be offering oyster lovers a choice of two different $10 tasting plates. One plate will feature a freshly shucked jumbo-size Pacific oyster adorned with ponzu sauce and caviar. The second will feature three medium-size Pacific oysters with pandanus vinaigrette and karkalla.
