For every Sample Food Festival and every Sample Lunch we’ve run, we’ve had hundreds of requests to “run another one” or “run a dinner”. So this year we have added a special Friday night dinner.

Signature Flavours” brings together 4 chefs (2 local and 2 from out of town), all of them at the top of their game. For one night they’ll join forces and bring a signature dish to create a very special evening at the beautiful Byron At Byron Resort and Spa.

Monique is the owner and chef at Seaweed Cuisine, a fully licensed wedding and event catering company based in Byron Bay.

Monique’s passion for food began as a child. Her mother, who was born in Yokohama, Japan met her Portuguese father in Macau. For Monique, the family dinner table was always filled with a myriad of East and West cuisine combinations. Home was an exciting mixing pot from where her passion for food and cooking was born.

Luca’s culinary journey began at the tender age of 8, by the hip of his mother and Nonna in Milan, Italy. From these beginnings his career has flourished through some of the great kitchens of Italy, London, Bermuda and more recently Australia.

Luca has a passion for simplicity in food, placing a premium on fresh and seasonal ingredients. It may indeed be Luca’s devotion to the idea of setting, atmosphere and conversation that surround a meal that promise to make his contribution to this event special.

Gavin Hughes

Gavin Hughes is Head Chef at The Byron at Byron Resort and Spa, a position he has held since the resort opened back in December 2004.

Gavin is a true advocate of all things local, ensuring the restaurant adopts a paddock-to-plate philosophy. He uses regional produce wherever possible and is an honorary member of the Byron Farmers’ Market where you will find him every Thursday morning sharing the experience with resort guests.

Justin is the executive chef at Sydney’s Hotel Centennial however it’s his appearance on a range of TV shows and books that have made him a household name. Justin likes responds to location in his cooking. So it will be a rare treat to see how Justin responds to Byron Bay.

The Menu

Upon arrival you’ll be treated to Canapes and a welcome drink to prime your tastebuds.

Over the next 3 courses you’ll be treated to Signature dishes from each to the chefs. Each course will be served with matching wines.

The Venue

The Byron At Byron is a stunning venue at anytime of the day. Intricately linked to it’s surrounding and styled for comfort and grace, the resort reveals a special beauty at night.

Of course for anyone coming from out of town for #SampleFoodFest there is a strong case to stand at the resort and attend our “Salt Of The Earth” lunch (just across the road at the Byron Bay Golf Club) and “Signature Flavours” for a complete Sample experience.
